For Avocado Crema:

  • 1 ripe avocado
  • 1/2 cup Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fresh cilantro, chopped
  • Salt and pepper to taste

For Tacos:

  • 8 small corn or flour tortillas
  • Shredded lettuce
  • Diced tomatoes
  • Sliced jalapeños (optional)
  • Crumbled queso fresco
  • Fresh cilantro leaves
  • Lime wedges

Instructions:

Prepare the Spicy Lamb Taco Meat:

  • In a large skillet, heat olive oil over medium heat.
  • Add chopped onion and minced garlic to the skillet and sauté until softened and fragrant.
  • Add ground lamb to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
  • Stir in chili powder, ground cumin, paprika, cayenne pepper, salt, and pepper. Cook for an additional 2-3 minutes to let the flavors meld. Remove from heat and set aside.

Make the Avocado Crema:

  • In a blender or food processor, combine ripe avocado, Greek yogurt, fresh lime juice, chopped cilantro, salt, and pepper.
  • Blend until smooth and creamy. If the crema is too thick, you can add a splash of water or more lime juice to achieve the desired consistency.

Assemble the Tacos:

  • Warm the tortillas in a dry skillet or microwave until pliable.
  • Spoon the spicy lamb mixture onto each tortilla.
  • Top with shredded lettuce, diced tomatoes, and sliced jalapeños if you prefer an extra kick.
  • Drizzle the avocado crema over the toppings.
  • Sprinkle crumbled queso fresco on top.
  • Garnish with fresh cilantro leaves and serve with lime wedges for an added burst of citrusy flavor.
