Farm Pickup

  • We do not have a retail store at our farm.  Only online purchases scheduled for pickup will be available for on-farm pickup.
  • $125 minimum for all orders (including pickup orders).
  • At online checkout you will be given the ability to select between having your order shipped or collecting your order from our farm in Middle Island, NY.  If you choose the pickup option, you will be provided a calendar to select your pickup date / time.  Please know that the days available for pickup are very limited at this time.
  • Only orders scheduled for pickup on the date/time scheduled will be distributed.  No exceptions.

How We Raise Our Chicken

Cooking Tips

  • Our pastured chicken breast is best when paired with flavors and not overcooked. We recommend either a flavorful dry seasoning rub or marinade to impart complementary flavors prior to cooking.
  • Chicken breast should be cooked to an internal temperature of 165 degrees; being careful not to overcook - which will lead to tough and dry meat.
  • Cast Iron Skillet:
    Coat chicken breast in seasoning blend of your choice. Heat cast iron skillet over medium high heat and cover bottom of pan with thin layer of high heat oil. Place chicken in pan and cook on one side for 1 minute, flip and place skillet in 450 degree oven for up to 10 minutes. Cook to internal temperature of 162 degrees and remove from oven. Carryover cooking will bring your chicken to 165 degrees.
  • Reverse Sear:
    Follow same steps as above, but cook both sides of chicken breast for four minutes before placing in oven.
  • In Oven:
    Preheat oven to 425 degrees, drizzle chicken with olive oil and liberally sprinkle with seasoning of choice. Rub oil and seasoning into chicken. Place on baking pan and bake for 16-18 minutes until a meat thermometer registers an internal temperature of 162 degrees. Remove from oven, carryover cooking will bring your chicken to 165 degrees.
