Acabonac’s Signature Instant Pot Lamb Stew

Ingredients:

  • 2 pounds of pasture raised lamb stew meat from Acabonac
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 1 pound potatoes, peeled and diced
  • 1 cup frozen peas
  • 4 cups beef or vegetable broth
  • 1 cup red wine (optional, for added richness)
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instant Pot Lamb Stew Instructions:

  1. Turn on the Instant Pot's "Saute" function and heat the olive oil. Add the lamb stew meat and brown it on all sides to seal in the flavors. Remove the meat and set it aside.
  2. In the same pot, saute the chopped onion and garlic until they become fragrant and translucent.
  3. Add the carrots, celery, and potatoes to the pot. Stir them for a couple of minutes until they start to soften.
  4. Return the browned lamb stew meat to the pot and pour in the red wine (if using). Allow it to simmer for a minute to deglaze the pot, scraping up any flavorful bits from the bottom.
  5. Stir in the tomato paste, dried thyme, dried rosemary, bay leaves, salt, and pepper. Mix everything together to evenly coat the ingredients.
  6. Pour in the beef or vegetable broth, ensuring that the liquid covers all the ingredients. Add the frozen peas on top, but do not stir them in.
  7. Secure the Instant Pot lid and and adjust the cooking time to 25 minutes at high pressure.
  8. Once the cooking cycle is complete, allow the Instant Pot to release pressure naturally for about 10 minutes. Carefully turn the valve to "Venting" to release any remaining pressure.
  9. Remove the lid, and your aromatic Instant Pot Lamb Stew is ready to serve.
  10. Garnish with fresh parsley before serving, and enjoy the hearty goodness of this delightful lamb stew.
