Greek Lamb Pita Wraps with Homemade Tzatziki

Ingredients:

  • 1 lb Acabonac Farms pasture raised ground lamb
  • 4 pita bread rounds
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • Fresh parsley for garnish

Instructions:

Prepare the Tzatziki Sauce:

  • In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped oregano.
  • Season with salt and pepper to taste and stir well to combine.
  • Cover the bowl and refrigerate the tzatziki sauce for at least 30 minutes to allow the flavors to meld together.

Cook the Ground Lamb:

  • In a skillet over medium heat, add the Acabonac Farms ground lamb and cook until it browns and becomes crumbly.
  • Add minced garlic, lemon zest, and chopped oregano to the skillet, and continue cooking for an additional 2-3 minutes.
  • Season with salt and pepper to taste, and then set the cooked lamb aside.

Assemble the Lamb Pita Wraps:

  • Warm the pita bread rounds in a toaster or on a skillet for a few seconds to make them more pliable.
  • Spread a generous spoonful of the tzatziki sauce on each pita bread round – making a sort of taco.
  • Top with a portion of the cooked ground lamb, cherry tomatoes, red onion slices, diced cucumber and crumbled feta cheese.
  • Garnish with fresh parsley for a pop of color and added freshness.

  • Fold the pita wraps in half or roll them up, securing the filling inside.
