Farm Pickup

  • We do not have a retail store at our farm.  Only online purchases scheduled for pickup will be available for on-farm pickup.
  • $125 minimum for all orders (including pickup orders).
  • At online checkout you will be given the ability to select between having your order shipped or collecting your order from our farm in Middle Island, NY.  If you choose the pickup option, you will be provided a calendar to select your pickup date / time.  Please know that the days available for pickup are very limited at this time.
  • Only orders scheduled for pickup on the date/time scheduled will be distributed.  No exceptions.

Cooking Tips

  • Skirt Steak Marinade: Because it is lean, grass fed skirt steak benefits from a marinade before cooking. Marinated skirt steak quickly picks up flavors due to the thinness of the cut. A simple marinade perfect for skirt steak tacos is:
    3 tbl olive oil
    1 tbl lime juice
    1 tsp black pepper
    2 cloves garlic minced
    Combine all ingredients in a ziploc bag, add steak and allow to marinate for 30 minutes prior to grilling.
  • How to cut: Skirt steak can be a bit tougher than other cuts of beef if not prepared correctly. We recommend cutting skirt steaks thinly and against the grain for the best eating experience. If making skirt steak tacos first cut thinly against the grain before cutting strips into a smaller dice.
  • Flank vs skirt steak: While flank and skirt steaks are often used interchangeably in recipes there are a few differences that come down to where the cut comes from. Flank steaks are from the cattle’s bottom abdominal area, while the skirt steak is from a thin strip located in the diaphragm area.
