Grass-Fed Beef Sirloin Kebabs

Ingredients:

  • 3 TB extra-virgin olive oil
  • 3 TB fresh lemon juice
  • salt and pepper
  • 1/2 small sweet onion (such as Vidalia), thin sliced
  • 2 TB chopped fresh dill
  • 1/2 cup plain greek yogurt
  • 1 pound grass-fed top sirloin steak, trimmed
  • 2 TB olive oil
  • 1 tsp ground coriander
  • 1 tsp black pepper
  • 8 (8 inch) skewers
  • Cooking spray
  • Servings: 4

Instructions:

  1. Preheat grill to high (450F to 550F).
  2. Combine olive oil, lemon juice, onion, dill and yogurt. Season with salt and pepper.
  3. Cut steak into 1 inch strips. Toss with oil, coriander, pepper and 3/4 tsp salt. Thread 2 strips onto each skewer.
  4. Place skewers on a grill coated with cooking spray. Grill, uncovered, 90 seconds on each side or until slightly charred.
  5. Serve with yogurt sauce.

Have used this method a couple of times, and it really is fool proof. This is my go to recipe for grilling chicken for one.

I always not only drain my meat, but rinse it with hot water. This will get all of the grease off. Then I leave it sitting in the collander over couple of paper towels for a few minutes to get as much water off as it can. Then I will bag or freeze it. And we always do salt, pepper, and garlic in all of our ground beef recipes. CrazyAsk

We tried this recipe and were disappointed with it. I’m sure we followed it step by step, and maybe it was supposed to happen this way – but the rice just turned to mush. the flavor was ok, but the mushy rice & the fact that there wasn’t much nutritional value to it aside from some protein from the chicken, we won’t be making it agin.Kelly Hubbard
